A producer who occasionally worked in collaboration with his older brother Sidney, Gilliat gained early experience in various capacities on films including The Lady Vanishes (1938). Later producing credits include The Green Man (1956), The Smallest Show On Earth (1957), Only Two Can Play (1962) and The Virgin Soldiers (1969).
